With a vision to redefine the very standard of umeshu, we began the creation of "Umeshu HAMADA Classic" a new pinnacle in pursuit of excellence.
The story begins in Ishigami, a region once thought unsuitable for farming due to its steep, barren slopes. Yet since the Edo period, it has thrived as a homeland of ume.
Thanks to long hours of sunlight, excellent drainage, and mineral-rich sea breezes from the Kuroshio Current captured by mountains like Daijamine, the land revealed itself to be uniquely suited for ume cultivation. While umeshu-making has long been a tradition alongside ume farming, bringing it to market as a refined product took many years of dedication and craft.

Our journey toward commercializing umeshu began in 2006.With the completion of our new farm, we achieved our unique "Kōjō Cultivation" method—entirely free of chemical fertilizers—and began practicing fully organic farming without the use of pesticides.Confident that we could now reach the quality we had long pursued, we took our first steps toward crafting our own umeshu.
We wait patiently for each plum to ripen fully on the tree and fall naturally to the ground before harvesting.Within 12 hours, the plums are immersed in liquor, and through our proprietary Five-Step Sugar Extraction Method, we delicately draw out their essence—capturing the lush aroma and smooth, low-bitterness profile that only fully ripened ume can offer.

By using a higher plum-to-liqueur ratio than conventional methods and allowing the blend to mature for five full years, we have achieved an unprecedented richness and depth—born from the meticulous pursuit of time-honored techniques.What further sets this umeshu apart is the use of French-origin base spirits and a touch of caramel syrup.
By blending traditional Japanese craftsmanship with carefully selected international ingredients, we’ve created a liqueur of exceptional complexity and lingering elegance.
