It all started with an idea: “What if we tried eating umeboshi this way?" One person's comment eventually became everyone’s catchphrase, and the Umeboshi Lab was born. We experimented with many ideas bring them to fruition. While maintaining the traditional production method from Kishu Ishigami, we want to seek out as many possibilities for umeboshi as we can. And we are taking on new adventures even today.
